Balti is a medium-hot British Indian restaurant classic, cooked and served in the distinctive rounded balti pan. It is known for its aromatic spice blend, rich tomato base and proper curry-house warmth.

Our version is inspired by the British Indian restaurant style: a slow-cooked onion and tomato sauce layered with coriander, cumin, garlic, ginger and warming spices.

The result is a medium-hot curry with deep savoury flavour, rounded heat and a rich tomato base. It works beautifully with chicken, lamb, paneer or vegetables.

Balti recipe card

You will need:

  • 450–500g chicken thigh or chicken breast, diced
  • 1 large onion, finely diced (approx 200g)
  • 1 x 400g tin chopped tomatoes or plum tomatoes
  • 3 tbsp neutral oil or ghee
  • 100–150ml water or chicken stock
  • Rice, Naan or Chips to serve
  • Optional: ½ green pepper, sliced
  • Optional: Fresh Coriander
